The Jasper, Costa’s self-described coastal Italian focus, leaves plenty of room for improvisation. Incorporating miso, fish sauce and other Japanese sensibilities into a menu filled with intrigue, Costa chef Vinson Petrillo blends nostalgia with a flair for the dramatic at the four-month-old establishment.

You can probably tell by now that Costa is not your typical red sauce Italian joint. Its self-described coastal Italian focus leaves plenty of room for improvisation.

Incorporating miso, fish sauce and other Japanese sensibilities into a menu filled with intrigue, Petrillo blends nostalgia with a flair for the dramatic at the four-month-old establishment. Petrillo’s sharp technique and penchant for playing with textures are on display here, as they are at The Restaurant at Zero George, a small downtown spot where for the last decade the chef has curated a multi-course menu.
